AYANA’s newest, and first Mediterranean, dining destination recently opened at AYANA Segara Bali Hotel. Inside Bali’s largest integrated resort, the restaurant joins a unique and exception dining roster. Alongside renowned Rock Bar, SCUSA’s is the 26th dining destination within AYANA’s 90-hectar estate.
With Italian Chef de Cuisine Emberto Sbardella at the helm, the menu highlights authentically crafted Mediterranean cuisine, and Sbardella’s rich Mediterranean cuisine knowledge – with the freshest local ingredients. SCUSA guests are taken on a culinary journey through rich Mediterranean textures, flavors, and aromas. Fresh ingredients are celebrated in every dish from succulent grilled meats and delicate raw seafood, to soups, pastas and salads.
Sbardella seamless pairs fresh local AYANA farm herbs and flavors with authentic Mediterranean dishes – offering a truly unique Bali dining experience. Signature menu items include Stuffed Calamari with Vierge and Confit Tomato Sauce, Mackerel Carpione, Grilled Grain-Fed Striploin Beef and Sbardella’s personal favorite, Pappardelle with Pecorino Fondue topped Lamb Ragout.
SCUSA offers an extensive and exclusive Italian and Spanish, red and white wine list – perfect for complementing the Mediterranean-infused cuisine. Cocktails lovers enjoy specially crafted Balinese flavors developed by local mixologists – infused with local fruit flavors. Signature cocktails include the Scusa Ginger Splash and Scusa Punch, or the Tamarillo Melon Basil mocktail.
Guests are transported to the Mediterranean with a relaxed indoor-outdoor setting, with a breezy Mediterranean Sea reminiscent courtyard, surrounded by white and blue accents – designed by renowned P49 DEESIGN studio. From the Italian-style fountain to the interior ornate wood furnishings and herb-filled terracotta pots – every SCUSA element was thoughtfully curated for charming ambiance and Mediterranean region ‘essence’.
AYANA Segara Bali opened in November, perched between lush tropical gardens overlooking the Jimbaran Bay. It features 197 elegantly modern guestrooms and suites. The AYANA estate features the 22,000 square meter AYANA destination spa, 14 swimming pools, AYANA Farm, an 18-hole golf putting course, jogging trail and much more.
